Living Roots Session Sparkling White 750ml NV

A blend primarily of Elvira from our family's Shale Creek Vineyard and Riesling from a number of vineyards around the Finger lakes. The Elvira was picked early for naturally low alcohol, and a portion of the grapes were made into piquette with a couple days skin contact to further lower the alcohol and to add texture. The rest was pressed lightly right away, cold settled and racked before fermenting. Made in the Charmat method, we used unfermented juice for tirage instead of adding sugar, and stopped the secondary fermentation early to leave balanced residual sweetness.

The wine is full of juicy white peach, yellow apple, and golden pear characters, along with some chalkiness and fine bubbles on the palate.
