The New Wave Girl is 100% Organic/Biodynamic Verdejo vinified in 100-year-old clay pots using wild yeasts. A slow spontaneous fermentation lasts 30 days on the skins. Bottled unfined and unfiltered with very little sulfur.
Flavor Profile: Full-bodied, dry. Amber/Butterscotch color with poire on the nose. Almond fig cake and quince on the palate. New Wave Girl drinks like a Blanc de Noirs with a leesy finish. Pair with grilled fish or poultry, cold seafood, and pork.
